Method

  1. Season the pork

Heat the oven to 350°F. Coat the pork loin with oil and season it with salt and pepper, or any rub you like.

  2. Roast

Roast uncovered in a pan or on a rimmed sheet for about an hour, until a thermometer in the thickest part reads 145°F. Size varies, so go by temperature, not time.

  3. Onions and sauce

While the pork cooks, sauté, grill or caramelize the onions. Stir the mayo, mustard, honey and pepper together in a small bowl.

  4. Rest and toast

Let the pork rest for 10 minutes. Meanwhile, split the bread and toast the cut sides until they start to brown, in a skillet, toaster or under the broiler.

  5. Slice and melt

Slice the pork thin and layer it on the bread with provolone. Leave the sandwiches open and broil on high just until the cheese melts. Watch closely.

  6. Finish

Top with the onions and a spoonful of honey mustard, close them up and serve right away.

Tip: Roasting uncovered won't dry the loin out. Overcooking will, so pull it right at 145°F.
